PUMPKIN pumpkin PUMPKIN

I grabbed all my fall decorations from my grandma's garage the other day and started decorating our little abode. It's raining right now and I have some hot apple cider and I love it! I love fall. I have pumpkin candles, leaf decorations, gourds on the table, and constant horror movies playing on the television.

I did want to make some fall desserts so I found this recipe on Betty Crocker's website. It's specifically for gluten free necessity but I tweaked it just a little bit for our wants. This one is for Chocolate chip pumpkin cookies and is INSANELY easy.

Pumpkin-Chocolate Chip Cookies
3/4 cup canned pumpkin(not pumpkin pie mix)
1/4 cup butter, softened(not melted)
1 tsp vanilla
1 egg
1 package(19 oz) Betty Crocker chocolate chip cookie mix
1/2 teaspoon ground cinnamon

1. Preheat oven to 350 degrees. Grease cookie sheets with spray or shortening.
2. In large bowl, stir pumpkin, butter, vanilla, and egg until blended. Stir in cookie mix and cinnamon, until soft dough forms. Drop dough by tablespoons 2 inches apart on cookie sheets.
3. Bake 10 to 12 minutes(it took about 10 with our oven). Cool for about 15 minutes.

The recipe says that it makes 3 dozen cookies. It did not for me. It made 12 large cookies. It's too bad because these were so delicious I wanted to share them with everyone.

So Behind

Okay, I'm awful at this blogging thing. I admit it. I thought if I put a little effort, maybe designed it cute had Aaron vector me a cute picture I'd stay on top of it. To be honest, a blog is just on the back burner. I like to read them, I like to comment, but sit down and write updates on my life to no one in particular sounds so odd. It's like a public diary.

Let's see. My last post was about couponing. I'm still doing it. I have a 3-inch binder that's full to the brim with coupons from the paper or online or at the store or sent to me. It's incredible and we've saved so much money. Literally I walk out of the store spending less than $20, on what used to cost more like $100. It's awesome, to say the least. Just time consuming. Clipping coupons during the evening can get boring sometimes.

I've been working a heap and so has Aaron. We appreciate the time we have together, even if it is few and far between. On friday we both had the day off, so we headed to the apple orchard and went through a corn maze. It took us only 25 minutes but we had an awesome time. We had to answer trivia questions to determine which way we were suppose to go. It was great. I don't know how much time this week we'll be able to spend together but i'm sure we'll make it count.

Looking for Halloween costumes, I haven't been able to find one that I like enough to get. I kind of just plan on being what I was last year. I'm lazy and uncreative sometimes.

Extreme Couponing

I feel like such a nerd. No a housewife. No an addicted personality that shifts from one obsession to the next. Food, Beer, Couponing, it's all the same really. all vices. Anyway, hopefully this keeps me from going as nuts. I've been printing out tons of coupons this afternoon and reading diligently websites over and over to save money. God knows we need to save money. The student loan payments will be pilling in soon and i've yet to find a job in my field. I got offered a retail job and am going to work that until we figure our financial situation out. Suffice to say, we need this. So this is nuts. I'm trying to save as much as I can and learning the tips and tricks to save.

I've always sort of been thrifty. I hunt deals at the thrift stores, I buy most of my clothes on sale or on clearance. I mean I have an email specifically for restaurant "e-clubs" and couponing websites I use.  I have been trained to save money and try to spend the money you have wisely. Yes, you can be tempted by just the sale items but it's so exciting when you get a good deal, rush if you will. That stems back to my vices from the first paragraph but that's neither here nor there.

Besides the coupoining today has been a loss of many proportions. The Colts lost. Doesn't seem like a good season for them and i'm sort of sad. We went to a picnic today and enjoyed the lake by our apartment. Random lake we just sort of came across.

I start my job friday and i'm looking forward to making some money. Considering I haven't had a job since 97-er-July haha.

First Anniversary

This day last year,( Saturday, August 28, 2010) I married my best friend. I remember the entire day like it was a dream. I spent the day with my best friend getting ready and filling my stomach with butterflies. I enjoyed every minute of it. I love knowing that I get to spend the rest of my life with Aaron. He makes me incredibly happy every day. I believe that there is someone out there for everyone. Someone that just fits. That just completes you. I believe I was lucky enough to get Aaron so early in my life. He brightens my day with just being there for me. I love being able to share my feelings, my concerns, my dreams, my hopes with the best person I can. Here's to you my love!

Dinner on me!

Without a job you have  a lot of time on your hands. Not the "oh i'm bored what do i do for a day" kind of time. More like the "i'm 70 and i'm retired and i've cleaned the same spot for a week" kind of time. So this results in the apartment being spotless and me watching marathons of sloppy reality shows.

So i've come up with a solution until I find a job. I'm learning to cook. Slowly but surely. With small amounts of recipes with small ingredients, I am filling Aaron up with a warm meal every night. I've made my way into the meat department with ease. I used to be deathly afraid to touch meat. I couldn't stand the feeling. I mean who enjoys it? But with time and patience, i've figured this out. Tonight's meal was no exception. It was so good I called my grandma and brought her some. As a season veteran cook, even she enjoyed it. I was so proud of myself.

I used to be a baking queen, now i'm turning a new leaf.

I'm going to try hard to update my blog. There are so many great blogs that i've been eyeing the last month or so, I don't know if mine can compete! But I hope if not entertaining, I can at least look back and use this as a diary of sorts.
